Ingredients

  • 2 cups Quinoa cooked
  • 3 cups Kale chopped and massaged
  • 1 large handful Italian flat leaf parsley roughly chopped
  • 1  Leek finely sliced
  • 1  Cucumber diced
  • 1  Bell Pepper diced
  • 1  Grated carrot
  •   Lemon Juice
  •   olive oil
  •   Salt and pepper to taste

  1. Toss ingredients together with lemon juice and olive oil
