- 2 cups Quinoa cooked
- 3 cups Kale chopped and massaged
- 1 large handful Italian flat leaf parsley roughly chopped
- 1 Leek finely sliced
- 1 Cucumber diced
- 1 Bell Pepper diced
- 1 Grated carrot
- Lemon Juice
- olive oil
- Salt and pepper to taste
