
Ingredients
- 2 cups red lentils soaked
- 1 square inch Ginger grated
- 2 cloves garlic minced
- 2 cm fresh turmeric grated
- 1 large onion diced
- 2 tsp Cumin ground
- pinch dried chili
- 2 tsp mustard seeds
- 1 tsp Sea salt
- 2 tbsp Coconut oil
- juice of half a lemon
- fresh coriander/cilantro
Servings: 4
Instructions
- Sauté onion in coconut oil until tender.
- Add ginger, garlic turmeric, cumin, mustard seeds, chili, and sauté for 3 minutes.
- Add lentils and cover with water and simmer for about 30 minutes stirring regularly.
- Finish by seasoning with salt, a squeeze of lemon and freshly chopped coriander leaves.
