
Ingredients
- 2 leeks washed and sliced
- 2 tbsp olive oil cold pressed
- 4 potatoes large dice
- 1/2 cauliflower divided into florets
- 4 Thyme sprigs
- 4 Kale leaves sliced
- 2 tsp salt and fresh cracked pepper
- Water to cover
- 1 handful flat leaf parsley roughly chopped

Instructions
- Saute leeks in olive oil until tender
- Add the rest of ingredients except parsley
- Cook until tender over a low heat
- Once tender, garnish with chopped parsley
