Ingredients

  • 2  leeks washed and sliced
  • 2 tbsp olive oil cold pressed
  • 4  potatoes large dice
  • 1/2  cauliflower divided into florets
  • 4  Thyme sprigs
  • 4  Kale leaves sliced
  • 2 tsp salt and fresh cracked pepper
  •   Water to cover
  • 1  handful flat leaf parsley roughly chopped

Servings: 4

Instructions

  1. Saute leeks in olive oil until tender
  2. Add the rest of ingredients except parsley
  3. Cook until tender over a low heat
  4. Once tender, garnish with chopped parsley
